Imeretian saffron


Powdered dired marigold flowers are also known as Imeretian saffron after Georgian province Imereti. 

Marigold was extensively used in Middle Ages and was called "the herb of the sun". Georgians continue to use marigold for culinary purposes in spice mixes and sauces, it gives both citrus and earthy flavor and there is no real substitute for it.

Marigold not only gives bright yellow color, like saffron or turmeric, but also has high antioxidant content and anti-inflammatory effect.
